Step 1
Drain and rinse the chickpeas. In a large bowl, smash the chickpeas with a fork until they become chunky.
Step 2
In a small bowl, combine oil, tahini, lemon juice and garlic. Season with salt and pepper, then whisk until well blended. Add this lemon-tahini dressing to the smashed chickpeas.
Step 3
Fold celery, scallions and pickled cucumber relish into the smashed chickpea mixture.
Step 4
Spread one side of each bread slice with vegan mayonnaise and the chickpea salad mixture. On the other side, divide lettuce, alfalfa, and avocado, then top with some of the radishes and tomatoes. Close the sandwiches and serve.
These chickpea salad sandwiches pair well with potato chips, fruit salad and some fresh squeezed juice.
